Smoky Chipotle Salsa

A Rick Bayless recipe:

3 garlic cloves

4 tomatillos

2 chipotle chiles

pan sear em 4 minutes (on each side), into the food processor add the chipotle chiles and fire it up.

Very good, easy to make…this one is a keeper,

Vinegarette

my new favorite. it is all in the simplicity.

3 tablespoons olive oil

1.5 tablespoons fresh lemon juice

1 teaspoon dijon mustard

1 teaspoon honey

some salt and pepper.

i shake it up in an old mustard jar.

Ribs

went basic with the ribs, simple rub: paprika, salt, pepper, brown sugar a little of this, little of that. Smoked them for about 90 minutes and then sauced them with a sweet sauce….nice.

This is my inspiration for the day, Henry F-ing Miller. If we would have played the old game of, “who would you invite to dinner” earlier in the day my answer would have been: Jesus, Chuck Norris and Paul Bunyan. That dinner would be fun with lots of stories with demons being driven into sheep, kicking and tree chopping. All of that is out because Henry F-ing Miller is coming to dinner now. Hang around until he tells the story about the guy driving with one arm through the Amazon.
